Pumpkin & Burrata Pasta
October' recipes' re back! When healthy eating meets pasta, that's a wrap! This recipe is inspired from Lapetitechefmumu. Ingredients needed for the Pumpkin & Burrata Pasta Whole wheat pasta (small rigatonis here), 1 small-sized pumpkin, Chicken broth, Olive oil, Salt, Pepper, 1 tbp of mascarpone, 1 burrata, Parmesan cheese. How to prepare your Pumpkin & Burrata Pasta First, cut your pumpkin into small cubes and display them on tinfoil. Add a bit of olive oil, salt, and pepper, and then let them bake for 30 min at 200°. Once ready, mix those pumpkin cubes and add the mascarpone. Aside, prepare the boiling water for the whole pasta with the chicken broth & salt. Once the water is boiling, add the pasta for 12 min. After that, pour the baked pasta with a bit of water from the boiling in a pan. Add your pumpkin puree and mix. Feel free to add some salt & pepper.
