I've got to tell you, I think this recipe is my new addiction. I cooked it twice in 3 days, it says it all.
I like this recipe, because it's very easy to integrate into your daily life, in between your job, the gym, and the commute. As always, it remains quite healthy and yummy, and you will need only a few ingredients. In other words, here is a more than welcome recipe for a better healthy living.
General information:
Level: easy
Time: 30 min
Ingredients needed for 1 person:
125 gr of gnocchis
150 gr of frozen spinach (feel free to use fresh ones if it is the season)
6 cherry tomatoes
1 tbsp of cream cheese (here I use Goldessa cheese, same taste as Philadelphia cheese)
20 gr of Feta cheese
1 tsp of pesto verde
1 garlic glove
Salt, pepper, espelette pepper
Preparation:
Rinse the veggies if needed.
Pour the veggies into a pan along with the garlic clove (if it's fresh spinach, add some olive oil to the pan).
Once the veggies are melting, add the cream cheese as well as the crumbled feta cheese, the pesto, and the spices.
Let it bake slowly.
Aside, cook the gnocchis by pouring them into boiling water for 3 minutes.
Once ready, add the gnocchis and a bit of water from the gnocchis to the pan containing the cheesy and creamy veggies and stir.
Let it simmer over low heat for 15 minutes.
Help yourself and enjoy.
