Ingredients needed for the Zucchini Pesto Pasta (2ppl):
For the pesto:
1 fresh zucchini (ideally when it's the season),
1 to 2 tbsp of olive oil,
1 handful of fresh basil,
1 handful of parmesan,
1 handful of pine nuts,
1 garlic glove,
Pinch of salt & pepper (cautious with the salt).
For the pasta:
250gr of wholegrain pasta,
Pinches of salt,
Extra toppings: parmesan & basil.
How to prepare:
Start by washing and cutting the zucchini into small cubes and cook them in a pan with olive oil.
Once cooked, pour them into a blender and add the garlic glove, the basil leaves, the spices, the pine nuts, and the parmesan. Blend till smooth texture.
Aside, simply cook your pasta in a pot.
Once ready, prepare your plate and top it all with extra parmesan and some basil.
