Blueberry Banana Bread

Good morning,


Here is my new version of the banana bread; the blueberry banana bread. Perfect for breakfast as well as a snack, here below is the recipe. :)



General info

Level: easy

Time:

  • 15 min prep

  • 45 min baking

  • 1h cool down (optional)

Ingredients

  • 1 cup 1/2 (200 gr) of whole flour

  • 3 eggs

  • 4 ripe bananas

  • 1/3 cup (113gr) of honey

  • 1/2 tbsp of baking powder

  • 1/2 tbsp of salt

  • 1/3 cup (100 ml) of coconut oil

  • 1 tbsp of vanilla sugar (optional)

  • 1/2 cup (64 gr) of blueberries

How

  • Blend all the ingredients except the blueberries and half of a banana.

  • Save the dough aside.

  • Wash your blender and blend the blueberries with a bit of water (2- 3 tbsp).

  • Take one rectangular mold and pour half of the dough you previously made.

  • Pour the blueberries' juice on the top of the first half of the dough.

  • Finally, pour the rest of the dough to cover the blueberries' juice.

  • Let it bake for 45 min at 360F (180°). But after 30 min add the rest of the banana (slices) you previously saved on the top.

  • Once ready, let it cool down for 1 hour.

I recommend you spread some peanut butter (or jam) on your blueberry banana bread slice. It's even better!
