3 Guilt-free healthy desserts

Hi there,

Have you ever heard about healthy yet gourmet desserts? Yes, you correctly read, I put healthy and gourmet in the same phrase, surprising, right? Ok, let me explain.

First, for those who still don't know me, you have to know that I'm a hugeee fan of desserts, and I'm also very greedy, which basically doesn't help when watching my weight...

I've to admit that, sometimes, it's very frustrating to indulge knowing I try hard to be more healthy and lose some weight but still, I'm not ready to give up on desserts. So where is the balance then?

Today, I can tell you that I found it, and this is mostly thanks to one of my new friends in Vancouver, Liliya Roys. She made me discover how we can make delicious and gourmand desserts out of healthy ingredients. But cautious, that doesn't mean I never crave unhealthy sweet desserts anymore (all about balance).

Honestly, my friend is a very good cook, and she keeps surprising me with her new recipes. The most surprising is that she made up those healthy desserts just at that moment, pure invention.

Enough blabla, let's jump onto the healthy dessert recipes my friend allowed me to share with you.

Avocado Chocolate mousse, a healthy dessert

Healthy dessert #1: Avocado Chocolate Mousse

I'm 99% sure that, at this point, you wonder "what the hell is this recipe?". All good, I had the same apriori. But, as promised, it's worth the try!

Anyway, for this one, you'll need:

(For 4 persons)

  • 2 avocados

  • 1 orange (zest and squeezed juice from half of it ) (optional)

  • 125gr of dark chocolate (85%)

  • 80gr of coconut milk

  • 2 tsp of honey (or maple syrup)

  • 20 gr of coconut sugar

  • topping: 5 fresh mint leaves (optional)

Use a blender to mix all the ingredients together until you achieve the mousse texture.

Aside, melt the chocolate with a trickle of water on low heat. Once melted, incorporate the chocolate into the rest of the recipe. Blend until smooth and foamy texture.

Healthy cookie desserts

Healthy dessert #2 Almond flour Cookies

Here you'll need:

(For 2 persons)

  • 200 gr of almond flour

  • One egg

  • 2 tbsp of organic coconut cream

  • 2 tbsp of peanut butter

  • 5 dates

  • Crumbled fried nuts (add after everything is blended )

  • 1/4 cup of almond unsweetened milk (it should have creamy texture)

  • 1 tsp organic cocoa powder

  • salt

  • half tsp of cinnamon

Once you've blended all these together, use two tablespoons to form some cookies, display them on a baking paper, and leave them for 15 min in the oven (I like my cookies to be tender in the center, but it's up to you). Serve yourself a huge cup of fresh milk and soak your cookies in it, a real gem!

Egg Nog with cinamon stick, a delicious healthy dessert

Healthy dessert #3: The Eggnog

Basically, the Eggnog is a kind of greedy milk punch Canadians're used to drink for Christmas. But as it's too good to solely drink it during Christmas time I decided to share its recipe with you. I like drinking it as a greedy digestif after a good dinner, a real treat!

What do you need for this?

(For 4 persons)

  • 3 Yolks

  • 3 cups of Oat Milk

  • Baileys ( depends on how drunk you wanna get but min 1 cup)

  • 2 tbsp Honey / Maple syrup

  • 1 tsp Cinnamon

  • Pinch of Salt

  • Pinch of nutmeg

  • 2 Anise stars

Warm up the milk with the anise stars till it starts boiling, aside, mix yolks with all other ingredients in a bowl. Then, slowly pour the hot milk into the bowl containing the yolk mixture and quickly mix it with a fork so eggs yolks will stay creamy. Continue mixing for 30 more seconds even after all milk is poured.

And that's it, a real breeze.

Who is up to try??

XX,

Math.
